Chickpea quinoa with cumin spiced tempeh

Cooking a spice as delicious as cumin with tempeh is so simple but the beauty of tempeh is it really takes on all the flavours of anything that it is being cooked with and cumin and tempeh are a perfect match. Try this delicious chickpea and quinoa dish and let us know what you think.

Ingredients:

* 200g Tempeh diced into small squares
* 1 yellow onion diced
* 1 tbsp minced garlic
* 1 tbsp tomato paste (we used chilli tomato paste for extra punch)
* 1/2 tsp cumin
* black pepper
* 1 cup quinoa
* 1 can chickpeas drained
* 2 cups veg broth
* fresh toms to serve

1) Diced your onion and in a frying pan add the onion and a little oil
2) Drain and rinse your quinoa till the water runs clear and then add to a saucepan with the veg stock (keep a little back for later) and start to boil - see packet for directions
3) Add your garlic an tomato paste to the onion and cook for a few mins
4) Add your cumin and the tempeh cubes and cook for a further few minutes stirring regularly, you may need to add a little more oil or a little of the veg stock
5) Add in your chickpeas and stir
6) Drain your quinoa once it is done and add to the onion mix, stirring well
7) Serve with some fresh tomatoes and a little garnish for colour
