Tempeh Bubble & Squeak
A great way to use up leftover vegetables after the festive period. Use whatever veg you have leftover but for this recipe check out below.
* Brussel sprouts
* Boiled new potatoes
* 1/2 block of tempeh
* Salt and pepper
* 1 Clove garlic crushed
* 1/2 onion chopped
1) Melt 1 tbsp oil, in a non-stick pan, allow it to get nice and hot, add 1/2 finely sliced onion and 1 chopped garlic clove.
2) Add pre cooked Brussels sprouts and the shredded boiled cabbage and let it colour slightly. All this will take 5-6 mins.
3) Add your tempeh to the pan and toss and colour for a few minutes
4) Add the potato. Work everything together in the pan and push it down so that the mixture covers the base of the pan. Once it has all got some colour, add your salt and pepper to taste and serve.
