Tempeh & Aubergine Gratin

Tomato, Tempeh and Aubergine are a match made in comfort food heaven. Try out this simple dish with our delicious tempeh and remember to tag us in your posts @impulsetempeh to be in with a chance to be featured!


* 200g tempeh sliced
* 2 Large aubergines, sliced
* 4 tbsp olive oil
* fresh basil
* 4-5 sprigs of thyme, picked
* 30g flaked almonds
* Salt and pepper

For the sauce

* 2 tins tomatoes
* 3 garlic cloves sliced
* 75g cashews
* olive oil
* 2 bay leaves
* a pinch of sugar


1) Firstly make the tomato sauce, add all ingredients to a pan and bring to a simmer for 20 mins then blitz in a blender till smooth and set aside, make sure you take out the bay leaves before you blitz.
2) Preheat the oven to 180/160, slice the aubergines and tempeh and on a griddle pan sear on both sides, brush with a little oil before, during and after
3) Layer a oven proof dish with a little sauce, then the aubergine, then the tempeh then the sauce and repeat till its all gone
4) scatter over the basil and thyme leaves
5) scatter with flaked almonds and bake in the oven for 30-35 mins.
