Tempeh & Lentil Stuffed Mushrooms

A 15 minute dinner idea is great for a week night dinner for the whole family and this one is filling and delicious, serve with a salad.

Ingredients:

* 1/2 block of tempeh diced into small chunks
* 2 large mushrooms each
* olive oil
* salt and pepper
* 1 tin green lentils drained
* 1 garlic clove diced
* 1 small onion diced
* 1 tbsp capers
* 2 tbsp parsley chopped finely
* 1/2 tsp english mustard
* 1/2 lemon juice and zest
* 50ml extra virgin olive oil

Recipe:

1) Preheat your oven to 190/170, remove the mushroom talks and place upside down and brush each one with a little oil
2) Place on a baking tray for 15 - 20 mins along with the tempeh cubes
3) Add the lentils to pan and add the mustard, onion, garlic, capers, salt, pepper, parsley, lemon juice and zest and mix together to warm
4) Add the baked tempeh into the lentil mix and fill the mushroom cases with the lentil mix
5) Keep some of the mushroom juice back and pour over the mushrooms once filled, serve with a simple green salad.
