Tempeh pasta California

If you like lime juice and garlic then this is the dish for you! Zingy and refreshing, a perfect dish for when you’ve consumed too many mine pies over the festive season and you are desperate for greens.


* 200g Tempeh cubed
* 2 tbsp olive oil
* 8 garlic cloves crushed
* 1/2 lime zest
* 1 tsp red pepper flakes
* 1 cup veg stock
* 2 tbsp lime juice
* 2 large handfuls of rocket/ spinach
* 1 large avocado sliced


1) Bring a large pot to the boil and get your other ingredients prepped and ready as this dish is super quick to make, add your pasta to a large pan of water
2) Heat the oil in a large pan and add the garlic
3) Add veg stock, lime juice, pepper flakes and simmer
4) Add the rocket and spinach and tempeh
5) simmer for few minutes
6) when the pasta is almost done add the broccoli for 1 minute
7) add the pasta and broccoli to the frying pan, toss together and add the avocado
8) serve with a generous grind of black pepper
