Tempeh mac n cheese

The ultimate comfort food! Macaroni and cheese with the addition of crispy tempeh slices served with wilted greens and a crunchy buffalo tomato.


* macaroni
* 200g tempeh
* 1 tsp salt
* olive oil
* lemon juice

cheese sauce:

* 2 cups veg broth
* 1/4 cup flour
* olive oil
* 3 garlic cloves minced
* pinch of dried thyme
* 1/4 tsp salt
* black pepper
* 1/8 tsp turmeric
* 3/4 cup nutritional yeast or vegan cheese
* 1 tsp lemon juice
* 1 tsp yellow mustard


1) Grab a large pan of water and add a little salt and add your macaroni
2) Add a little oil to a frying pan and slice the tempeh lengthways and cook the tempeh on each side for a few mins till crispy, set aside to cool slightly
3) to make the cheese sauce, combine the veg stock and flour till smooth
4) place the oil and garlic in a small saucepan and cook gently for a few mins
5) add thyme, salt and pepper. Then add the flour mixture, turmeric, yeast and keep stirring
6) take off the heat once thickened and add the lemon juice and mustard and stir in
7) once your macaroni is cooked, drain and add to a large serving platter and add the sauce on top
8) add spinach and some fresh tomatoes and top with the crisped tempeh
