Vegan Mushroom and Tempeh Stroganoff

A perfect comfort food for any day of the week and best of all it's super quick and easy to throw together. 

Recipe:

* 200g Tempeh sliced
* Linguine per person
* 2/3rd cup soy milk
* 2/3rd cup veggie stock
* Salt and pepper
* 2 cups sliced mushrooms
* 2 tsp chopped fresh parsley
* 3 cloves chopped garlic
* 1 large red onion sliced
* 1 tsp paprika
* 1 tsp red crushed chilis

Method:

1) Heat a little oil in a frying pan and add the garlic and onions and cook for a few minutes
2) Add the mushrooms and cook for a further few minutes
3) Add the paprika, chilli, stock and milk
4) Turn down the heat and leave to simmer for a few minutes
5) Add the sliced of tempeh to a frying pan with a little oil and crisp on both sides for a few minutes each
6) Heat a large pan of water and cook your linguine or pasta according to the packet instructions
7) Add the salt and pepper an the chopped tempeh to the sauce
8) When the pasta is cooked,drain and stir into the sauce
9) Sprinkle with a little fresh parsley to finish
