Roasted veg, quinoa and a tasty oregano & basil Tempeh

A great way to use up roasted leftover vegetables combined with quinoa and tempeh for a protein punch ๐Ÿ‘Š

Ingredients:

* 200g Block Tempeh
* 2 large cups of leftover roasted vegetables
* Quinoa 1/4 cup per person cooked
* Fresh oregano (dried is fine if you canโ€™t find fresh)
* Fresh basil leaves

Method:

1) Add your quinoa to boiling water and 1 stock cube (optional) and cook for the desired time according to your quinoa packet
2) Take your roasted veg and mix with fresh basil and oregano and add to a large frying pan and heat through
3) Add your tempeh and a little more fresh or dried herbs
4) Once your quinoa is cooked mix it in with everything else and serve with more fresh basil - a taste sensation!
