Crisped tempeh with coriander and black bean rice

All the flavours in this dish with a punchy fresh coriander rice with juicy black beans and simple crisped tempeh.

Ingredients:

* 200g tempeh - any flavour
* Fresh coriander - 1 large handful sliced
* Brown rice - portion per person
* 1 tin of black beans, drained
* 1 tsp cumin
* 1 diced carrot
* 2 spring onions sliced finely

Method:

1) Cook your rice according to instructions (boil, steam or microwave depending on your method)
2) Add a little oil to a large frying pan whilst your rice is cooking and add your carrot and cook till softening
3) Add your black beans and the cumin
4) Drain your rice once cooked and add to the frying pan and turn down the heat low
5) Heat your grill or griddle and cook your tempeh till crispy
6) Mix in 2/3 or your coriander to the rice mix
7) Mix everything together and plate up, sprinkle with spring onion and more fresh coriander
