Minty Quinoa with Tempeh

✨Quinoa with mint, peas, kale & 🍋 topped with some lightly grilled tempeh, brushed with garlic oil 🍽✨

Summer is almost here and what says summer more than a fresh minty dish with a zingy lemon? We’ve added quinoa to some mint, kale and lemon and topped it with our fave tempeh, try it below and let us know what you think, we love hearing from you.

Ingredients:

* 1/2 cup quinoa cooked per person
* Small bunch of mint finely chopped
* 1 large handful of kale per person
* 1/2 lemon juice
* 1 cup frozen peas defrosted
* 200g Tempeh (serves 2)
* 1 tbsp garlic infused oil

Method:

1) Cook your tempeh per instructions, we add a stock cube and 1/2 lemon in when cooking to give extra depth of flavour
2) Finely chop your kale and mint, add the peas and lemon juice and set to one side
3) Heat some garlic oil in a frying pan and add the slices of tempeh and slowly crisp on both sides, gently brushing with garlic oil as you go to get the flavour all the way in
4) When your quinoa is cooked add the mint, pea and kale mix and serve
